Veggie "Beef" Patties and Wilted Spinach with Onion






Ok, so this was one of those recipes I made by accident. I'll have to come up with a nickname for my "accident recipes". I'm trying to remember what all was in here. I just remember being exhausted that evening, and I didn't want to get out of the house to go to the store. I had some leftovers and came up with this. Please don't vomit in your mouth until you try it. I promise it tastes better than it looks and sounds. :p

I had some rice and black beans together from a previous day.  

The rest of it was zuccinni, mushroom, green onion, potatoe, and garlic.  These I sauteed together and then put in the blender. (Just wait a second...it wasn't that bad). Then I added the blended mixture to the rice and beans and formed into patties. These were surprisingly outstanding. Seasonings to taste.

Veggie Sage Rice




This is probably the most flavorful thing yet. I dont know if my taste buds are changing, but vegetables are full of flavor the last couple days.

one small zuccinni
half small yellow onion
medium tomato
chile flakes
one sage leaf
sea salt to taste
garlic powder
instant brown rice
veggie broth

This topping has one small zuccinni, half a small yellow onion, one medium tomato, chile flakes, sage leaf. Saute all that low and slow. The brown rice I cooked in veggie broth with chile flakes. Toss topping and rice together or pile on platter and that's it. It was awesome.

Tomato Basil Spaghetti




The sauce is two large tomatoes, 1/2 small yellow onion sliced thin, three cloves garlic, chile flakes, two -three large basil leaves, olive oil, sea salt.  Saute the tomatoes, garlic, onion and chili flakes in the olive oil low and slow till it breaks down. Add in the fresh basil leaves during the last five minutes of cooking.

Cook whole wheat thin spaghetti in veggie broth with sea salt.

Toss together the sauce and pasta or serve piled on the platter then spread fresh basil over the pasta. (Use a sharp knife so you don't bruise the basil like I did. Ugly but yummy.)

The bread is that ancient grain bread that I have a picture of on here (post #2). I just brushed a little bit of olive oil on them and grilled.

*Now that I look back over these, mushrooms would have been really good in this.


Potato Pepper Burrito




This was my favorite breakfast meal.  

Kept it simple: cooked potatoes and bell peppers in minimal olive oil low and slow with some fresh thyme, salt and pepper added. On the side, some tomatoes and basil just because I eat tomatoes with almost every meal whether fasting or not. It helps keep the dish from being too dry. I was pretty pleased with this. Twas good. The tortilla is I used is described in post #2 of this blog.

Cilantro Lime Chile Rice

Daniel Fast Friendly:





Brown instant rice (small box)
chile flakes (2 teaspoons or to taste)
fresh garlic (3 cloves or to taste)
lime (1)
veggie broth (1 small box)
cilantro  (1 cup or to taste)
salt/pepper  (to taste)
Extra virgin olive oil


Saute the brown rice and chile flakes in the olive oil till slightly browned. Add in the veggie broth (use the rice to fluid ratio) and cilantro. Add in lime juice during the last 5 minutes of cooking. The amount is up to you. Once done cooking, toss in some more cilantro and voila. This is really simple. I used handfuls of cilantro because I like it, but that will be up to you to try because it seems people either love cilantro or hate it. Salt and pepper to taste.

My one suggestion of what to stay away from is to NOT cook the lime in the rice. It makes it BITTER.



The lime looks purty cooking in the rice but that's about it. Instead, I just squeeze the lime juice in at the end of cooking or once on the platter. I haven't tried a little zest cooked into the rice. You could try that. Up to you.

Ancient Grains






The loaf break is "ok" as is, but is a lot better grilled or toasted. It gets rid of a bit of the after-taste that I tasted. The tortillas are good if you go ahead and warm them up over fire or griddle as well. It gives it a more homemade flavor and consistency.  I won't be buying them again because they're expensie here, but I thought I'd try them once. Not bad. I bought these at a chain of grocery stores here called "United".


*Added: I WILL be buying them again because they are lasting me a good week plus at this point. The cost pans out and I enjoyed them more than I thought I would.
